Canned White Potatoes

Servings 6 Quart Jars
Equipment
- pressure cooker
Instructions
- peel potatoes, we use a rotato for the bulk of it and just hand peel the ends
- wash the potatoes well
- slice into half inch chunks
- soak in water to avoid discoloration and remove starchblanch for 2 minutes rinse well
- put into jars leaving 1 inch space
- add one half to one teaspoon salt per jar
- add hot water to jars leaving an inch headspace
- put into pressure canner and add three inches water or water as listed in your canner instructions
- process for 40 minutes at 10 psi
